True quality coffee is making a major comeback in the US, and connoisseurs consider this one of the best methods for brewing the finest cup of coffee. But a siphon pot is also a delightful way to brew the very best coffee because everyone who sees it in action is intrigued at the process. Constructed of two stacked glass globes, when heat is applied to the bottom globe by the alcohol burner below, water vapor forces water into the upper globe where the coffee grounds are stirred by hand, ideally with a bamboo paddle. (In Japan, siphon coffee masters carve their own paddles to fit the shape of their palms.) The goal is to create a deep whirlpool in no more than four turns without touching the glass. Watch as the liquids defy gravity. Once removed from the heat source. the brewed coffee moves back down to the bottom. The coffee gurgles, but it's not boiling as air is drawn through the spent grounds to release the built up vacuum.
